Potatoes are simply in my book, fantastic - you can boil them, mash them, roast them, grill them, fry them… the list goes on and on, but my favorite is the good ol’ smashed.
Ingredients
small to medium sized waxy potatoes
olive oil
garlic cloves | smashed
rosemary
thyme
salt
pepper
pinch of chile flakes | to taste
a few wedges of lemon
Instructions
Step 1
Preheat the oven to 400.
Step 2
In a large bowl add your potatoes and coat with a good glug of olive oil and a good sprinkling of salt. Spread the potatoes out on a baking sheet and bake until tender and easily pierced with a fork. The timing will depend on how large the potatoes are.
Step 3
On the stovetop, add a good glug of olive oil to a hot cast iron skillet. Careful not to overcrowd your pan, add in the roasted potatoes. With a wooden spoon or spatula smash the potatoes flat. Fry the potatoes until nicely brown on the first side.
Step 4
Flip the potatoes and add the garlic, a pinch of chile flakes, and the herbs. Let everything brown nicely. Remove from the pan. Season with salt and pepper. Serve immediately. Enjoy.
