Surprisingly delicious, unless told, most people have no idea that these fruit leathers are that different from the store-bought ones. Maybe they have a little bit more sourness and zing to them, but honestly, I find them way better than that over-processed, dyed, sugar-filled store version. The tangy flavor and chewy texture of SCOBY is perfectly suited to these on-the-go probiotic-rich snacks.
Ingredients
2 cups chunked fruit | any fruit will do. Some of my favorites are cherries, blackberries, or peaches.
1/4 cup sugar
2 cups pureed SCOBY
1-2 cups kombucha | To use as the liquid to puree the SCOBY
Directions
Step 1.
Combine your fruit and sugar, mixing well. Store covered in the fridge overnight to macerate.
Step 2.
The next day, go ahead and puree your SCOBY. Add enough kombucha to blend the SCOBY until it is roughly the texture of apple sauce.
Step 3.
Add your fruit mixture and puree.
Step 4.
Spread the mixture onto wax paper or silicone mats in a layer that about 1/4 inches thick. Do your best to keep it as even a layer as possible.
Step 5.
Two options here. Whichever option you use, dehydrate until no longer sticky to the touch.
Dehydrate in your dehydrator using the lowest setting.
Set your oven to the lowest setting and prop the door open.
The time will depend greatly on the temperature you use and the thickness of your layer. Peel from the wax paper, and enjoy.
Tip
If you are having a hard time getting your leather off of the wax paper, go ahead and throw it in the freezer for 10 to 15 minutes. It should help.
