This might seem like an unlikely match, however, the combination of the ripe sweet caramelized fruit and the peppery thin-walled slightly spicy pepper, topped off with the smokey flavor of a hot sear… it’s a feast for the eyes, as well as the belly.
Ingredients
A healthy pat of butter
5 peaches | ripe but still slightly firm. Pitted and sliced.
2 cups shishito peppers
Juice of half a lemon
Honey | for drizzling (try this infused fennel honey)
Salt
Instructions
Step 1
Get a cast-iron pan ripping hot on the stove. Add the butter and immediately add your slices of peaches and shishito peppers. Leave untouched for a minute or two until nicely seared.
Step 2
Flip your peaches and shishitos over to sear a second side. Don’t be afraid of some good dark color.
Step 3
Pull the peaches and shishitos off of the heat, remove from the cast-iron, and put into your serving vessel.
Step 4
To finish the dish, squeeze the juice of half a lemon over the top, drizzle with a little bit of honey, and sprinkle with salt. Taste, adjust seasoning if necessary, and enjoy.
