Roasted grapes, not something that you hear about all the time. But I love them. Melissa Clark has a delicious roasted grape and chicken recipe—that’s how I discovered them. And since them being on my radar, come grape season, I love sneaking them into different dishes for a little unexpected surprise. Try folding them into wild rice, or piling them on a seared pork chop, delicious!
Ingredients
2 cups grapes | red or green varieties
4 shallots | sliced
2 tablespoons olive oil
salt
Instructions
Step 1
Preheat the oven to 400.
Step 2
In a bowl toss the grapes and shallots with the olive oil and season with salt.
Step 3
Roasted for 20 minutes until the grapes have wilted and begun to burst. Enjoy.
