These happen in a flash, and are a super pleasant grilled potato, that is surely going to turn some heads.
Ingredients
1½ pounds fingerling potatoes
½ cup kosher salt
4 tablespoons unsalted butter
2 tablespoons red miso
1 garlic clove | finely chopped
1 tablespoon seasoned rice vinegar
Freshly ground black pepper
2 Tbsp. chopped parsley
Instructions
Step 1
Preheat the grill for medium-high heat. Meanwhile, add your salt and water to a pot on the stove and bring to a boil. Add the potatoes and reduce heat to a simmer, cooking until tender. Time will depend on the size of your potatoes.
Step 2
Drain the potatoes, pat dry, and put on the hot grill. Turn often until lightly charred.
Step 3
Meanwhile, using a grill proof skillet next to your potatoes, melt the butter and miso, stirring often, until butter is melted and the mixture is smooth. Remove from heat; stir in garlic and vinegar. Season with pepper.
Step 4
Transfer the potatoes into the sauce, smashing some with your tongs. Toss to coat. Add parsley; toss again. Serve hot. Enjoy.
